Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and cook until translucent.
- Add the carrots and potatoes to the pot and cook for a few minutes until slightly softened.

- Pour in the broth and bring to a simmer. Add the curry paste or powder, soy sauce, and mirin. Stir well to combine.
- Let the curry broth simmer for about 15-20 minutes until the vegetables are tender.
- Meanwhile, cook the udon noodles according to package instructions. Drain and set aside.
- Taste the curry broth and adjust seasoning with salt and pepper if needed.
- To serve, divide the cooked udon noodles into bowls and ladle the curry broth over the noodles.
- Garnish with sliced green onions and sesame seeds before serving.
