Ingredients
  

  • 2 lbs beef chuck roast cut into chunks
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 chipotle peppers in adobo sauce chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 cup beef broth
  • 1/4 cup apple cider vinegar
  • Salt and pepper to taste
  • 2 limes juice

Method
 

  1. In a slow cooker, combine the beef, onion, garlic, chipotle peppers, cumin, oregano, cloves, cinnamon, beef broth, and apple cider vinegar. Season with salt and pepper.
  2. Cook on low for 6-8 hours or until the beef is tender and easily shreds with a fork.
  3. Once cooked, shred the beef using two forks and mix in the lime juice.
  4. Serve the Barbacoa in tacos, burritos, or over rice with your favorite toppings like salsa, avocado, and cilantro.
  5. Enjoy!
