- In a slow cooker, combine the beef, onion, garlic, chipotle peppers, cumin, oregano, cloves, cinnamon, beef broth, and apple cider vinegar. Season with salt and pepper.
- Cook on low for 6-8 hours or until the beef is tender and easily shreds with a fork.
- Once cooked, shred the beef using two forks and mix in the lime juice.
- Serve the Barbacoa in tacos, burritos, or over rice with your favorite toppings like salsa, avocado, and cilantro.
