Ingredients
- 12 oz. refrigerated cheese tortellini
- 1 small onion finely diced
- 1/2 cup fresh parsley chopped (reserve a small amount for finishing)
- 1/2 cup fresh basil chopped (reserve a small amount for finishing)
- 2 cups marinara sauce jarred or homemade
- 1/2 cup water
- 1 tablespoon olive oil
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- Sea salt and black pepper to taste
Instructions
- Preheat the oven to 375°F.
- In a large casserole, mix together the tortellini, onion, parsley, basil, marinara, water, and olive oil. Season with salt and pepper to taste.
- Cover with aluminum foil and place in the oven to bake for 15 minutes.
- Remove from the oven, give the casserole a good mix, and cover with shredded mozzarella and parmesan.
- Cover again with foil and return to the oven for another 10 minutes. Remove the foil and bake an additional 5 minutes or until the tortellini is al dente and the cheese is hot and bubbly.
- Allow to cool for 5 minutes before serving. Garnish with fresh basil and parsley.
