Bloody Mary Poached Shrimp
Ingredients
Method
- Heat olive oil in a large deep skillet over medium heat.
- Add celery and season with salt and pepper to taste. Cook, stirring occasionally, until the celery softens slightly, approximately 3-4 minutes.
- Add garlic and chopped tomatoes. Increase the heat to medium-high. Cook, stirring occasionally, until the tomatoes become juicy, approximately 4-5 minutes.
- Pour in tomato juice, Worcestershire sauce, and hot sauce if using. Season with salt and pepper to taste. Bring the mixture to a gentle simmer, reduce heat to low and simmer for 10 minutes.
- Add shrimp and continue simmering until the shrimp become pink and opaque, approximately 3-4 minutes, taking care not to overcook.
- Remove from heat and stir in basil, parsley, and fresh lemon juice.
- Taste and adjust the seasoning with more salt, pepper, or hot sauce, if needed.
- Serve over fresh hot pasta.
- Enjoy!
