Ingredients
- 2 cups paneer (Indian cottage cheese), crumbled
- 1/2 cup sugar
- 1/4 cup mixed nuts (almonds, pistachios, cashews), finely chopped

- 4 cups water
- 1 cup sugar
- few drops rose water (optional)

- In a mixing bowl, combine crumbled paneer, sugar, mixed nuts, cardamom powder, and saffron strands. Mix well to form a smooth dough.
- Divide the mixture into equal portions and shape them into smooth balls. Press each ball lightly to flatten slightly.
- In a large pot, bring water and sugar to a boil to make a sugar syrup.
- Gently drop the paneer balls into the simmering sugar syrup and cook covered for about 15-20 minutes until the balls are soft and cooked through.
- Remove from heat and let it cool down to room temperature.
- Add rose water to the syrup (if using) for added fragrance.
- Garnish with sliced pistachios and almonds.
- Serve Kesaria Rajbhog chilled or at room temperature.
