Ingredients
- 2 cups urad dal (black gram lentils)
- 1 small onion finely chopped
- 2-3 green chilies finely chopped
- 1 handful fresh curry leaves chopped
- 1 inch ginger grated

- Soak the urad dal in water for about 4-6 hours. Drain the water and grind the dal into a smooth paste using a little water as needed.

- Heat oil in a deep frying pan. Wet your hands with water, take a small portion of the batter, shape it into a flat disc with a hole in the center to form the vada, and carefully slide it into the hot oil.
- Fry the vadas on medium heat until they turn golden brown and crispy. Remove from the oil and drain on paper towels to remove excess oil.
- Serve the vadas hot with coconut chutney or sambar.
