Ingredients
- 1 cup semolina (rava)
- 1 cup plain yogurt
- 1/2 cup water
- 1/2 tablespoon mustard seeds
- 1/2 tablespoon cumin seeds
- 1/2 tablespoon urad dal (split black gram)
- 1/2 tablespoon baking soda
- 1 green chili finely chopped
- 1 inch ginger grated
- 1 handful coriander leaves chopped
- Salt to taste

Instructions
- Dry roast the semolina in a pan on low heat until it turns light golden brown. Let it cool.
- In a mixing bowl, combine the roasted semolina, yogurt, water, salt, green chili, ginger, and coriander leaves. Mix well and let the mixture rest for 15-20 minutes.
- In a separate small pan, heat some oil and add the mustard seeds, cumin seeds, and urad dal. Let them splutter.
- Add this seasoning to the semolina mixture and mix well. Adjust the consistency by adding more water if needed. The batter should be thick yet pourable.
- Grease the idli molds with some oil and pour the batter into them.
- Steam the idlis in a steamer for about 15-20 minutes or until a toothpick inserted comes out clean.
- Allow the idlis to cool slightly before removing them from the molds.
