Egyptian meatloaf pastry, also known as “Hawawshi,” is a popular Egyptian dish consisting of spiced ground meat (usually beef or lamb) mixed with onions, peppers, and herbs, then stuffed into a pocket of dough and baked or grilled until golden brown and delicious. It’s a savory and flavorful dish that is perfect for a quick and satisfying meal.

Ingredients
  

  • 1 lb ground beef or lamb
  • 1 small onion finely chopped
  • 1 small green bell pepper finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • 4 pieces pita bread or dough for wrapping
  • Olive oil for brushing

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the ground meat, chopped onion, chopped bell pepper, minced garlic, cumin, paprika, coriander, salt, and pepper until well combined.
  3. Divide the meat mixture into 4 equal portions.
  4. Cut the pita bread in half to form pockets or roll out the dough into circles.
  5. Stuff each pita half or dough circle with one portion of the meat mixture, pressing it down gently to fill the pocket.
  6. Place the stuffed pitas or dough on a baking sheet lined with parchment paper.
  7. Brush the tops with olive oil for a crispy finish.
  8. Bake in the preheated oven for about 20-25 minutes or until the meat is cooked through and the pastry is golden brown.
  9. Serve hot and enjoy!
