Ingredients
  

  • 2 ripe bananas peeled and cut into 1-inch chunks
  • 8 slices bacon cut in half
  • 1/4 cup apricot preserves
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1/2 teaspoon garlic powder
  • Toothpicks

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wrap each banana chunk with a half slice of bacon and secure with a toothpick.
  3. Place the bacon-wrapped bananas on the prepared baking sheet.
  4. In a small saucepan, combine the apricot preserves, soy sauce, honey, and garlic powder. Heat over medium heat until the mixture is smooth and bubbly.
  5. Brush the apricot glaze over the bacon-wrapped bananas, making sure to coat them evenly.
  6. Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy and the bananas are tender.
  7. Remove from the oven and let cool slightly before serving.
