Ingredients
- 4 cups cooked white rice (preferably chilled)
- 1 cup diced roasted pork (can use leftover pork or purchase from a Chinese restaurant)
- 1 cup mixed vegetables (such as diced carrots, peas, and corn)
- 2 eggs beaten
- 4 green onions chopped
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 2 cloves garlic minced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat a wok or large skillet over medium-high heat. Add 1 tablespoon of vegetable oil.
- Add the beaten eggs and scramble until just cooked. Remove the eggs from the wok and set aside.

- Add the diced roasted pork and mixed vegetables. Stir-fry for 2-3 minutes until the vegetables are tender.
- Add the cooked rice to the wok. Use a spatula to break up any clumps of rice and mix well with the pork and vegetables.

- Add the scrambled eggs back to the wok and toss everything together.
- Add the chopped green onions and season with salt and pepper to taste. Stir to combine.
