Fried Tulingan, also known as fried mackerel, is a popular Filipino dish where mackerel fish is marinated, then fried until crispy. It’s typically served with a side of vinegar dipping sauce and steamed rice.

Ingredients
  

  • 4 fresh mackerel (tulingan) fish, cleaned and gutted
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 4 cloves garlic minced
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • Cooking oil for frying

Method
 

  1. In a small bowl, mix together soy sauce, vinegar, minced garlic, black pepper, and salt to create a marinade.
  2. Pat the mackerel fish dry with paper towels and place them in a shallow dish. Pour the marinade over the fish, making sure they are coated well. Marinate for at least 30 minutes.
  3. Heat cooking oil in a frying pan over medium-high heat.
  4. Fry the marinated mackerel fish in batches, about 4-5 minutes per side or until golden brown and crispy.
  5. Once cooked, remove the fish from the oil and place them on a plate lined with paper towels to drain excess oil.
  6. Serve the Fried Tulingan hot with steamed rice, vegetables and a side of vinegar dipping sauce.
  7. Enjoy!
