Eight Treasure Porridge, also known as Ba Bao Zhou, is a traditional Chinese dish made with glutinous rice, red beans, lotus seeds, jujubes, peanuts, and other ingredients. The “eight treasures” refer to the variety of ingredients used in the porridge. It is often sweetened with sugar or rock sugar and simmered until it reaches a thick and creamy consistency. Eight Treasure Porridge is commonly served during festive occasions or as a comforting dessert.

Ingredients
  

  • 1 cup glutinous rice
  • 1/4 cup red beans
  • 1/4 cup lotus seeds
  • 1/4 cup dried jujubes sliced
  • 1/4 cup peanuts
  • 1/4 cup dried longan or raisins
  • 1/4 cup rock sugar or brown sugar
  • Water
  • dried fruits or nuts additional for topping

Method
 

  1. Rinse the glutinous rice, red beans, lotus seeds, and peanuts separately under running water.
  2. In a large pot, combine the glutinous rice, red beans, lotus seeds, jujubes, peanuts, and dried longan (or raisins). Add enough water to cover the ingredients by about 2 inches.
  3. Bring the mixture to a boil over high heat, then reduce the heat to low and simmer, stirring occasionally, for about 1-2 hours or until the porridge reaches the desired consistency. Add more water if needed to prevent sticking.
  4. Once the porridge is thick and creamy, add the rock sugar or brown sugar and stir until dissolved. Adjust the sweetness to your liking.
  5. Serve the Eight Treasure Porridge hot, garnished with additional dried fruits or nuts if desired.
  6. Enjoy!
