Sweet potato fried balls

Method
- Peel and cube the sweet potatoes, then boil them until they are soft. Drain and mash the sweet potatoes in a bowl.
- Add the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper to the mashed sweet potatoes. Mix until well combined.
- Shape the mixture into small balls, about the size of a golf ball.
- Roll each ball in flour, then dip in the beaten eggs, and finally coat in breadcrumbs.
- Heat vegetable oil in a frying pan over medium heat.
- Fry the sweet potato balls in batches until they are golden brown and crispy on all sides, about 2-3 minutes per side.
- Remove the fried balls from the oil and drain on paper towels to remove excess oil.
- Serve the sweet potato fried balls hot with your favorite dipping sauce.
