Ingredients

Method
 

  1. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  2. Stir in the peppermint extract into the melted chocolate until well combined.
  3. Using a fork, dip each chocolate wafer cookie into the chocolate mixture, coating it completely.
  4. Place the coated cookies on a parchment paper-lined baking sheet and refrigerate for about 30 minutes to allow the chocolate to set.
