- Stir in the peppermint extract into the melted chocolate until well combined.
- Using a fork, dip each chocolate wafer cookie into the chocolate mixture, coating it completely.
- Place the coated cookies on a parchment paper-lined baking sheet and refrigerate for about 30 minutes to allow the chocolate to set.
