Russian Apricot Cookie

Method
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
- Add the vanilla extract and gradually mix in the flour until a soft dough forms.
- Divide the dough into 12 equal portions and roll each portion into a small ball.
- Flatten each ball into a disc and place a small dollop of apricot jam in the center.
- Fold the edges of the dough over the jam to form a crescent shape and seal the edges.
- Place the cookies on the prepared baking sheet and bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool slightly before dusting with powdered sugar.
- Enjoy!
