Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup old-fashioned oats
  • 3/4 cup all-purpose flour
  • 1/2 tablespoon baking soda
  • 1/2 tablespoon salt
  • 1/2 cup chocolate chips
  • 1/2 cup butterscotch chips

Method
 

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, mix together the oats, flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Gently fold in the chocolate chips and butterscotch chips.
  7. Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them a few inches apart.
  8. Bake for 10-12 minutes, or until the cookies are golden brown around the edges.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
