Enchilada casserole is a delicious Mexican-inspired dish made with layers of tortillas, seasoned meat (typically chicken or beef), cheese, enchilada sauce, and sometimes beans or veggies. It’s baked in the oven until everything is hot and bubbly.

Ingredients
  

  • 1 pound ground beef (or ground chicken/turkey)
  • 1 small onion diced
  • 1 bell pepper diced
  • 1 can red enchilada sauce 10 oz
  • 1 can black beans 14 oz, drained and rinsed
  • 1 can diced green chilies 4 oz
  • 2 cups shredded cheese (Mexican blend or cheddar)
  • 8 small corn tortillas or flour tortillas
  • Salt and pepper to taste
Optional toppings:
  • sliced jalapeños
  • sour cream
  • cilantro
  • avocado

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and bell pepper, and cook until softened. Season with salt and pepper.
  3. Stir in the black beans and diced green chilies, then pour in about 1/4 cup of the enchilada sauce to mix everything together.
  4. Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
  5. Place 2 tortillas on the bottom of the dish, overlapping slightly.
  6. Spoon a layer of the meat mixture over the tortillas, then sprinkle with a layer of cheese.
  7. Repeat layers of tortillas, meat mixture, and cheese until you’ve used all your ingredients, ending with a final layer of cheese on top.
  8. Cover the dish with foil and bake for 20-25 minutes.
  9. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  10. Let the casserole cool slightly before serving. Top with your favorite toppings and enjoy!
