Ingredients
  

  • 1 lb chicken breasts boneless, skinless, cut into bite-sized pieces
  • 1 small butternut squash peeled, seeded, and diced
  • 1 cup quinoa rinsed
  • 1 onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a slow cooker, combine the chicken, butternut squash, quinoa, onion, garlic, chicken broth, thyme, cumin, salt, and pepper. Stir to combine.
  2. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and the butternut squash is tender.
  3. Taste and adjust seasoning if needed.
  4. Serve the soup hot, garnished with chopped fresh parsley.
  5. Enjoy!
