Slow Cooker Butternut Squash, Chicken and Quinoa Soup

- In a slow cooker, combine the chicken, butternut squash, quinoa, onion, garlic, chicken broth, thyme, cumin, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and the butternut squash is tender.
- Taste and adjust seasoning if needed.
- Serve the soup hot, garnished with chopped fresh parsley.
- Enjoy!
