  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef chunks and brown on all sides. Remove the beef from the pot and set aside.

  • Add the diced potatoes to the stew and continue to cook until the potatoes are cooked through, about 30 minutes. Add green peas if using.
  • Season with salt and pepper to taste. Remove the bay leaves and thyme sprigs.
