Artichoke ‘Sausage’ Panini with Roasted Red Peppers

Method
- Preheat a panini press or grill pan over medium heat.
- In a small bowl, mix together the olive oil, minced garlic, salt, and pepper.
- Brush the olive oil mixture onto one side of each slice of bread.
- Cook the artichoke sausage links in a pan or grill until browned and cooked through.
- Assemble the sandwiches by spreading vegan mayonnaise on the inside of each slice of bread.
- Place a cooked artichoke sausage link on the bottom slice of bread.
- Top with roasted red peppers and vegan cheese if desired.
- Place the other slice of bread on top to create a sandwich.
- Place the sandwiches on the panini press or grill pan and cook until the bread is toasted and the ingredients are heated through.
- Serve hot and enjoy!
