Ingredients
  

  • 4 artichoke sausage links
  • 1 cup roasted red peppers sliced
  • 8 slices bread (ciabatta or focaccia works well)
  • 1/2 cup vegan mayonnaise
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Vegan cheese (optional)

Method
 

  1. Preheat a panini press or grill pan over medium heat.
  2. In a small bowl, mix together the olive oil, minced garlic, salt, and pepper.
  3. Brush the olive oil mixture onto one side of each slice of bread.
  4. Cook the artichoke sausage links in a pan or grill until browned and cooked through.
  5. Assemble the sandwiches by spreading vegan mayonnaise on the inside of each slice of bread.
  6. Place a cooked artichoke sausage link on the bottom slice of bread.
  7. Top with roasted red peppers and vegan cheese if desired.
  8. Place the other slice of bread on top to create a sandwich.
  9. Place the sandwiches on the panini press or grill pan and cook until the bread is toasted and the ingredients are heated through.
  10. Serve hot and enjoy!
