Ingredients
- 4 cups cooked white rice (preferably chilled)
- 2 tablespoons vegetable oil
- 2 eggs lightly beaten
- 1 cup cooked shrimp chicken, or pork (diced)

- 1/2 cup carrots diced
- 2 green onions chopped
- 2 cloves garlic minced

- Season with salt and pepper to taste. Cook for an additional 2-3 minutes, stirring constantly.
