Yang Chow fried rice
Ingredients
Method
- Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of oil.
- Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil. Add the garlic and cook until fragrant.
- Add the cooked protein (shrimp, chicken, or pork) and stir-fry for a few minutes.
- Add the diced carrots and peas, and continue to cook until the vegetables are tender.
- Add the chilled rice to the skillet and break up any clumps with a spatula.
- Stir in the soy sauce, green onions, and cooked eggs. Mix well to combine all the ingredients.
- Season with salt and pepper to taste. Cook for an additional 2-3 minutes, stirring constantly.
- Serve hot and enjoy!
