Ingredients
  

  • 4 cups cooked white rice (preferably chilled)
  • 2 tablespoons vegetable oil
  • 2 eggs lightly beaten
  • 1 cup cooked shrimp chicken, or pork (diced)
  • 1/2 cup frozen peas thawed
  • 1/2 cup carrots diced
  • 2 green onions chopped
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste

Method
 

  1. Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of oil.
  2. Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Add the garlic and cook until fragrant.
  4. Add the cooked protein (shrimp, chicken, or pork) and stir-fry for a few minutes.
  5. Add the diced carrots and peas, and continue to cook until the vegetables are tender.
  6. Add the chilled rice to the skillet and break up any clumps with a spatula.
  7. Stir in the soy sauce, green onions, and cooked eggs. Mix well to combine all the ingredients.
  8. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, stirring constantly.
  9. Serve hot and enjoy!
