Vegetable pakora is a popular Indian snack made by deep-frying mixed vegetables like onions, potatoes, spinach, and various spices coated in chickpea flour batter. It’s crispy on the outside and soft on the inside, perfect for enjoying with chutney or dipping sauces.

Ingredients
  

  • 1 cup chickpea flour (besan)
  • 1 small onion thinly sliced
  • 1 potato peeled and thinly sliced
  • 1/2 cup spinach leaves chopped
  • 1 green chili finely chopped (optional)
  • 1 tablespoon cumin seeds
  • 1 tablespoon turmeric powder
  • 1 tablespoon chili powder
  • Salt to taste
  • Water as needed
  • Oil for frying

Method
 

  1. In a large mixing bowl, combine chickpea flour, cumin seeds, turmeric powder, chili powder, and salt. Mix well.
  2. Add sliced onion, potato, spinach, and green chili to the flour mixture. Mix until all vegetables are coated evenly with the flour.
  3. Slowly add water to the mixture and stir until you have a thick batter that coats the vegetables.
  4. Heat oil in a deep frying pan over medium heat.
  5. Take spoonfuls of the vegetable batter and carefully drop them into the hot oil. Fry in batches, making sure not to overcrowd the pan.
  6. Fry the pakoras until they are golden brown and crispy.
  7. Remove the pakoras from the oil and place them on a paper towel to drain excess oil.
  8. Serve hot with mint chutney, tamarind chutney, or ketchup.
  9. Enjoy!
