Ukoy
Ukoy is a Filipino dish made of deep-fried shrimp and vegetable fritters. It’s typically made with small shrimps, julienned sweet potatoes, and bean sprouts mixed in a batter before being deep-fried until crispy. It’s a delicious and savory snack or appetizer
- 1 cup small shrimps (peeled and deveined)
- 1 cup sweet potatoes (julienned)
- 1 cup bean sprouts
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1 egg
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- Oil (for frying)
- In a bowl, mix the flour, cornstarch, baking powder, egg, water, salt, and pepper to create a batter.
- Add the shrimp, sweet potatoes, and bean sprouts to the batter and mix well.
- Heat oil in a deep pan for frying.
- Scoop a portion of the mixture and drop it into the hot oil. Flatten slightly to form a fritter.
- Fry until golden brown and crispy on both sides. Remove and drain on paper towels.
- Serve hot with vinegar dipping sauce on the side.
