Ukoy

Ukoy is a Filipino dish made of deep-fried shrimp and vegetable fritters. It’s typically made with small shrimps, julienned sweet potatoes, and bean sprouts mixed in a batter before being deep-fried until crispy. It’s a delicious and savory snack or appetizer

  • 1 cup small shrimps (peeled and deveined)
  • 1 cup sweet potatoes (julienned)
  • 1 cup bean sprouts
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 egg
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Oil (for frying)
  1. In a bowl, mix the flour, cornstarch, baking powder, egg, water, salt, and pepper to create a batter.
  2. Add the shrimp, sweet potatoes, and bean sprouts to the batter and mix well.
  3. Heat oil in a deep pan for frying.
  4. Scoop a portion of the mixture and drop it into the hot oil. Flatten slightly to form a fritter.
  5. Fry until golden brown and crispy on both sides. Remove and drain on paper towels.
  6. Serve hot with vinegar dipping sauce on the side.
  7. Enjoy!
