Ingredients
  

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting
  • Oil for frying

Method
 

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and vanilla extract.
  3. Slowly add the wet ingredients to the dry ingredients and mix until well combined.
  4. Heat the oil in a deep fryer or a heavy-bottomed pot to 350°F (180°C).
  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  6. Remove the beignets from the oil and drain on a paper towel.
  7. Allow the beignets to cool slightly, then fill a piping bag with raspberry jam.
  8. Insert the tip of the piping bag into each beignet and fill with jam.
  9. Dust the raspberry beignets with powdered sugar before serving.
  10. Enjoy!
