Hopia Dice Mongo is a traditional Filipino pastry that consists of a flaky outer crust filled with a sweet mongo bean paste.

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter melted
  • 1 cup sweetened Mongo paste (mung bean)
  • 1 egg beaten, (for egg wash)

Method
 

  1. Preheat your oven to 350°F (180°C).
  2. In a mixing bowl, combine the flour, sugar, and melted butter. Mix well until a dough forms.
  3. Divide the dough into 4 equal parts and shape each part into a small ball.
  4. Flatten each dough ball into a small disc, about 1/4 inch thick.
  5. Place a spoonful of sweetened monggo paste in the center of each disc.
  6. Fold the edges of the dough over the filling to form a small square or rectangle shape.
  7. Place the filled pastries on a baking sheet lined with parchment paper.
  8. Brush the tops of the pastries with the beaten egg wash.
  9. Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown.
  10. Allow the pastries to cool before serving.
  11. Enjoy!
