Hellimli salata is a traditional Cypriot salad made with grilled halloumi cheese, fresh vegetables, olives, herbs, and a simple dressing of olive oil and lemon juice.

Ingredients
  

  • 1 pound halloumi cheese sliced
  • 2 large tomatoes diced
  • 1 cucumber diced
  • 1/2 red onion thinly sliced
  • 1/2 cup Kalamata olives pitted
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Method
 

  1. Heat a grill or grill pan over medium heat. Grill the halloumi cheese slices for a few minutes on each side until golden brown.
  2. In a large bowl, combine the diced tomatoes, cucumber, red onion, olives, mint, and parsley.
  3. Add the grilled halloumi cheese to the bowl and gently toss to combine.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  5. Drizzle the dressing over the salad and toss gently to coat.
  6. Serve the Hellimli salata chilled or at room temperature. Enjoy!
