Method
- Heat a grill or grill pan over medium heat. Grill the halloumi cheese slices for a few minutes on each side until golden brown.
- In a large bowl, combine the diced tomatoes, cucumber, red onion, olives, mint, and parsley.
- Add the grilled halloumi cheese to the bowl and gently toss to combine.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently to coat.
- Serve the Hellimli salata chilled or at room temperature. Enjoy!
