Ingredients
  

  • 2 pounds firm white fish sliced or fillet (such as catfish or tilapia)
  • 1/4 cup fish sauce
  • 1/4 cup sugar
  • 4 cloves garlic minced
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • Fresh herbs (such as cilantro or green onions) for garnish

Method
 

  1. Cut the fish fillets into serving-sized pieces, about 2-3 inches wide.
  2. In a mixing bowl, combine the fish sauce, sugar, minced garlic, and black pepper. Stir until the sugar is completely dissolved.
  3. Place the fish fillets in the bowl with the marinade, ensuring that each piece is coated with the mixture. Let it marinate for about 15-20 minutes.
  4. Heat the vegetable oil in a large skillet or clay pot over medium heat.
  5. Once the oil is hot, carefully place the marinated fish fillets into the skillet, reserving the marinade.
  6. Cook the fish on each side for about 3-4 minutes, until they are lightly browned.
  7. Reduce the heat to low and pour the reserved marinade over the fish. Cover the skillet or clay pot with a lid and let it simmer for about 15-20 minutes, or until the fish is cooked through and the sauce has thickened.
  8. Stir the fish gently halfway through the cooking process to ensure that it is evenly coated with the caramel sauce.
  9. Once the fish is cooked, remove it from heat and let it rest for a few minutes.
  10. Serve the Ca Kho To Ca Hu hot, garnished with fresh herbs and accompanied by steamed rice and your choice of vegetables.
