- Cut the fish fillets into serving-sized pieces, about 2-3 inches wide.
- In a mixing bowl, combine the fish sauce, sugar, minced garlic, and black pepper. Stir until the sugar is completely dissolved.
- Place the fish fillets in the bowl with the marinade, ensuring that each piece is coated with the mixture. Let it marinate for about 15-20 minutes.
- Heat the vegetable oil in a large skillet or clay pot over medium heat.
- Once the oil is hot, carefully place the marinated fish fillets into the skillet, reserving the marinade.
- Cook the fish on each side for about 3-4 minutes, until they are lightly browned.
- Reduce the heat to low and pour the reserved marinade over the fish. Cover the skillet or clay pot with a lid and let it simmer for about 15-20 minutes, or until the fish is cooked through and the sauce has thickened.
- Stir the fish gently halfway through the cooking process to ensure that it is evenly coated with the caramel sauce.
- Once the fish is cooked, remove it from heat and let it rest for a few minutes.
- Serve the Ca Kho To Ca Hu hot, garnished with fresh herbs and accompanied by steamed rice and your choice of vegetables.
