Brudet is a delicious traditional Croatian fish stew that is popular in the coastal regions of Croatia. Ingredients
  

  • 2 pounds fish fillets assorted, (grouper, sea bass, or mullet)
  • 1 pound tomatoes diced
  • 1 onion finely chopped
  • 4 cloves garlic minced
  • 2 bell peppers sliced
  • 2 carrots sliced
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 cup fish broth or vegetable broth
  • 1/2 cup white wine
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh basil chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and sliced bell peppers. Cook until the vegetables are tender, about 5 minutes.
  2. Stir in the diced tomatoes and tomato paste. Cook for another 2-3 minutes, allowing the flavors to meld together.
  3. Add the sliced carrots, fish fillets, fish or vegetable broth, and white wine to the pot. Season with salt, pepper, dried oregano, fresh parsley, and fresh basil. Stir gently to combine all the ingredients.
  4. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let the Brudet cook for about 30-40 minutes or until the fish is cooked through and flakes easily with a fork.
  5. Taste and adjust the seasoning if needed. You can add more salt, pepper, or herbs according to your preference.
  6. Serve the Brudet hot with crusty bread or cooked rice to soak up the flavorful sauce. Enjoy!
