Ingredients
- 1 pound razor clams cleaned and sliced into bite-sized pieces
- 2 tablespoons fermented black beans rinsed and mashed
- 1 red bell pepper sliced into thin strips
- 1 green bell pepper sliced into thin strips
- 4 cloves garlic minced
- 1 piece ginger minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon Shaoxing wine (optional)
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- Fresh cilantro or green onions for garnish (optional)
Instructions
- In a small bowl, mix together the soy sauce, oyster sauce, and Shaoxing wine (if using). Set aside.
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Add the minced garlic and ginger to the wok and stir-fry for about 30 seconds until fragrant.
- Add the sliced razor clams to the wok and stir-fry for 2-3 minutes until they start to turn opaque.
- Push the clams to one side of the wok and add the mashed black beans to the cleared area. Stir-fry the black beans for about 1 minute to release their flavor.
- Add the sliced bell peppers to the wok and stir-fry for another 2-3 minutes until they are slightly softened.
- Pour the sauce mixture over the clams and vegetables in the wok. Stir well to coat everything evenly.
- Cook for another 1-2 minutes until the clams are cooked through and the sauce has thickened slightly.
- Remove the wok from heat and drizzle with sesame oil. Give it a final stir to distribute the flavors.
- Garnish with fresh cilantro or green onions if desired.
- Serve the Stir-fried Razor Clams with Black Beans and Pepper hot with steamed rice or noodles.
