Empal gepuk is a delicious Indonesian dish that consists of thinly sliced beef that is marinated, boiled, and then fried until crispy. It is typically served with a spicy-sweet sauce made from chili, garlic, shallots, and palm sugar.

Ingredients
  

  • 1 pound beef (thinly sliced)
  • 4 cloves of garlic (minced)
  • 2 teaspoons coriander powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons palm sugar (or brown sugar)
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 2 cups water
For the sauce:
  • 5 shallots (finely chopped)
  • 4 cloves garlic (finely chopped)
  • 5 red chili peppers (deseeded and finely chopped)
  • 2 teaspoons tamarind paste
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil

Method
 

  1. In a bowl, combine the minced garlic, coriander powder, turmeric powder, palm sugar, and salt to create a marinade.
  2. Add the thinly sliced beef to the marinade and let it sit for at least 30 minutes to allow the flavors to penetrate the meat.
  3. Heat the vegetable oil in a large frying pan over medium heat.
  4. Fry the marinated beef slices until they turn brown and crispy on both sides. This may take around 3-4 minutes per side. Set the fried beef aside.
  5. In a separate pot, bring 2 cups of water to a boil.
  6. Add the fried beef slices to the boiling water and let them cook for about 30 minutes until tender. This step helps to further tenderize the meat.
  7. Once the beef is tender, remove it from the pot and drain the excess liquid.
  8. In a clean frying pan, heat 2 tablespoons of vegetable oil over medium heat.
  9. Sauté the finely chopped shallots, garlic, and red chili peppers until fragrant and golden brown.
  10. Add tamarind paste, palm sugar, and salt to the pan. Stir well until the sugar has dissolved and the sauce thickens slightly.
  11. Place the fried and boiled beef slices in the pan with the sauce. Coat the beef slices evenly with the sauce.
  12. Cook for an additional 1-2 minutes, allowing the flavors to meld together.
  13. Remove from heat and serve the Empal Gepuk hot with steamed rice or your preferred side dishes.
