Ingredients
- 2 cups Jeerakasala rice (short-grain rice)
- 1 pound chicken (cut into pieces) or your preferred choice of meat
- 3 onions (sliced)
- 2 tomatoes (chopped)
- 4 green chilies (slit)
- 1 tablespoon ginger-garlic paste
- 1 tablespoon biryani masala powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 cup yogurt
- 1 tablespoon lemon juice
- 1 handful mint leaves fresh, (chopped)
- 1 handful coriander leaves fresh (chopped)
- 4 cups water
- 4 tablespoons ghee (clarified butter)
Whole spices
- 2 cinnamon sticks
- 4 cardamom pods
- 4 cloves
- 2 bay leaves
- 2 star anise
- Salt to taste
Instructions
- Wash the rice thoroughly and soak it in water for about 30 minutes. Drain the water and set the rice aside.
- In a large pot or deep pan, heat 2 tablespoons of ghee and add the whole spices (cinnamon sticks, cardamom pods, cloves, bay leaves, and star anise). Sauté them for a minute until fragrant.
- Add the sliced onions and cook until they turn golden brown.
- Now, add the ginger-garlic paste and green chilies. Sauté for a few minutes until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Next, add the chicken (or meat of your choice) to the pot and cook until it is sealed and slightly browned.
- Add the biryani masala powder, turmeric powder, red chili powder, and salt. Mix well to coat the chicken evenly with the spices.
- Reduce the heat to low and add the yogurt, lemon juice, mint leaves, and coriander leaves. Stir and cook for a few minutes to allow the flavors to blend together.
- Add the soaked and drained rice to the pot, followed by 4 cups of water. Give it a gentle stir.
- Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes, or until the rice and meat are fully cooked and tender.
- Once cooked, remove from heat and let it sit, covered, for another 10 minutes to allow the flavors to meld.
