Sai krok Isan is a delicious and popular northeastern Thai dish. It is a type of sausage made from fermented pork, rice, garlic, and various herbs and spices. The mixture is stuffed into casings and then grilled or pan-fried to perfection. Sai krok Isan has a unique and distinct flavor that combines sourness, saltiness, and a hint of spiciness. Ingredients
  

  • 1 pound ground pork
  • 1/4 cup cooked rice
  • 2 cloves garlic minced
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon chili flakes (adjust according to your spice preference)
  • 4-6 dried sausage casings or fresh

Method
 

  1. In a large mixing bowl, combine the ground pork, cooked rice, minced garlic, fish sauce, soy sauce, palm sugar, ground coriander, ground cumin, ground white pepper, and chili flakes. Mix well until all ingredients are evenly incorporated.
  2. Soak the casings in warm water for about 15 minutes to soften them.
  3. Take a handful of the pork mixture and stuff it into the casing, making sure to fill it evenly. Tie off the ends of the casing to secure the sausage.
  4. Repeat the stuffing process until all the pork mixture is used up.
  5. Preheat your grill or a skillet over medium heat.
  6. Once heated, place the sausages on the grill or skillet and cook for about 10-12 minutes, turning occasionally, until they are cooked through and nicely browned.
  7. Remove the sausages from the heat and let them rest for a few minutes before serving.
  8. Serve Sai krok Isan with sticky rice and fresh vegetables of your choice. Enjoy!
