Ingredients
  

  • 2 pounds lean pork or beef (you can use either)
  • 1 cup soy sauce
  • 1/4 cup sesame oil
  • 4 cloves garlic minced
  • 2 tablespoons sugar
  • 1 teaspoon black pepper
  • 1 tablespoon sesame seeds (optional)
  • Green onion thinly sliced (optional, for garnish)

Method
 

  1. Fill a large pot with water and bring it to a boil. Add the pork or beef and cook for about 1 hour over medium heat until it’s fully cooked and tender.
  2. Once cooked, remove the meat from the pot and let it cool down. You can speed up the process by placing it in a bowl of ice water.
  3. While the meat is cooling, prepare the marinade. In a mixing bowl, combine soy sauce, sesame oil, minced garlic, sugar, black pepper, and sesame seeds (if desired). Mix well until the sugar is dissolved.
  4. Once the meat is cool enough to handle, thinly slice it. You can use a sharp knife or a meat slicer for this step. Aim for very thin slices, around 1/8 inch thick.
  5. Place the sliced meat in a shallow dish or a large ziplock bag. Pour the marinade over the meat, ensuring that all slices are coated. Cover the dish or seal the bag, and let it marinate in the refrigerator for at least 2 hours, or overnight for more flavor.
  6. When you’re ready to serve, arrange the marinated meat slices on a serving plate. You can garnish with thinly sliced green onion for added freshness and presentation.
  7. Pyeonyuk is typically enjoyed cold, so refrigerate any leftovers. It can be enjoyed as a standalone dish or as part of a Korean meal spread.
