Ingredients
- 2 pounds salted pork (such as pork belly or shoulder)
- 1 pound dried white beans (such as Great Northern or navy beans)
- 2 onions chopped
- 4 carrots peeled and chopped
- 2 cloves garlic minced
- 2 bay leaves

- Salt and pepper to taste

Instructions
- Rinse the dried white beans and soak them in water overnight. Drain and set aside.

- Bring the pot to a boil and then reduce the heat to a simmer. Cook for about 1.5 to 2 hours until the beans are tender and the pork is cooked through.
- Season with salt and pepper to taste.
- Serve petit salé hot, garnished with chopped fresh parsley.
