Ingredients

  • 2 pounds pork loin with skin (make sure the skin is scored)
  • Salt to taste
Optional:
  • herbs such as rosemary or thyme for additional flavor

Method

  1. Preheat your oven to 450°F (230°C).
  2. Pat the pork loin dry with a paper towel and season it generously with salt. Make sure to rub the salt into the scores on the skin.
  3. Optional: If you’d like to add herbs, sprinkle them on top of the salt.
  4. Place the pork loin in a roasting pan with the skin side up. Ensure that there is enough space around the pork for proper airflow.
  5. Roast the pork in the preheated oven for about 20 minutes to allow the skin to start crisping up.
  6. After 20 minutes, reduce the oven temperature to 325°F (160°C). Continue roasting for about 1 hour and 15 minutes, or until the internal temperature of the meat reaches 145°F (63°C).
  7. Once the pork is cooked, remove it from the oven and let it rest for about 10 minutes before slicing.
  8. Serve the Flæskesteg with your favorite sides like caramelized potatoes, red cabbage, and gravy.
