Instructions

- In a large pan or wok, heat the cooking oil over medium heat. Sauté the onions, garlic, and ginger until fragrant and translucent.
- Add the sliced pork lungs and heart to the pan. Stir-fry for about 5 minutes or until they start to brown slightly.
- Pour in the vinegar, soy sauce, and fish sauce. Mix well and let it simmer for a few minutes to allow the flavors to meld.
- Add the minced red chili peppers, paprika, black pepper, sugar, and salt. Stir everything together and let it cook for another 5-7 minutes, or until the pork is tender.
- Taste and adjust the seasonings according to your preference. If you want it spicier, you can add more chili peppers.
- Once the pork is tender and the flavors are well combined, remove the Bopis from heat.
