  • In a pot, boil the pork lungs and heart in water for about 10-15 minutes to remove any impurities. Once boiled, drain and let them cool. Then, slice the lungs and heart into thin strips.
  • In a large pan or wok, heat the cooking oil over medium heat. Sauté the onions, garlic, and ginger until fragrant and translucent.
  • Add the sliced pork lungs and heart to the pan. Stir-fry for about 5 minutes or until they start to brown slightly.
  • Pour in the vinegar, soy sauce, and fish sauce. Mix well and let it simmer for a few minutes to allow the flavors to meld.
  • Add the minced red chili peppers, paprika, black pepper, sugar, and salt. Stir everything together and let it cook for another 5-7 minutes, or until the pork is tender.
  • Taste and adjust the seasonings according to your preference. If you want it spicier, you can add more chili peppers.
  • Once the pork is tender and the flavors are well combined, remove the Bopis from heat.
  • Garnish with chopped spring onions for some freshness and added flavor.
