Bopis
Ingredients
- 1 pound pork lungs cleaned and thinly sliced
- 1/2 pound pork heart cleaned and thinly sliced
- 2 tablespoons cooking oil
- 1 medium-sized onion finely chopped
- 3 cloves garlic minced
- 1 thumb-sized ginger minced
- 2 red chili peppers minced (adjust according to your spice preference)
- 2 tablespoons vinegar
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon paprika
- 1 teaspoon ground black pepper
- 1 teaspoon sugar
- Salt to taste
- Spring onions chopped (for garnish)
Instructions
- In a pot, boil the pork lungs and heart in water for about 10-15 minutes to remove any impurities. Once boiled, drain and let them cool. Then, slice the lungs and heart into thin strips.
- In a large pan or wok, heat the cooking oil over medium heat. Sauté the onions, garlic, and ginger until fragrant and translucent.
- Add the sliced pork lungs and heart to the pan. Stir-fry for about 5 minutes or until they start to brown slightly.
- Pour in the vinegar, soy sauce, and fish sauce. Mix well and let it simmer for a few minutes to allow the flavors to meld.
- Add the minced red chili peppers, paprika, black pepper, sugar, and salt. Stir everything together and let it cook for another 5-7 minutes, or until the pork is tender.
- Taste and adjust the seasonings according to your preference. If you want it spicier, you can add more chili peppers.
- Once the pork is tender and the flavors are well combined, remove the Bopis from heat.
- Garnish with chopped spring onions for some freshness and added flavor.
