Bopis is a delicious Filipino dish made from pork lungs and heart, cooked with onions, garlic, and various spices. It's usually sautéed until tender and served as a flavorful appetizer or main course.
In a pot, boil the pork lungs and heart in water for about 10-15 minutes to remove any impurities. Once boiled, drain and let them cool. Then, slice the lungs and heart into thin strips.
In a large pan or wok, heat the cooking oil over medium heat. Sauté the onions, garlic, and ginger until fragrant and translucent.
Add the sliced pork lungs and heart to the pan. Stir-fry for about 5 minutes or until they start to brown slightly.
Pour in the vinegar, soy sauce, and fish sauce. Mix well and let it simmer for a few minutes to allow the flavors to meld.
Add the minced red chili peppers, paprika, black pepper, sugar, and salt. Stir everything together and let it cook for another 5-7 minutes, or until the pork is tender.
Taste and adjust the seasonings according to your preference. If you want it spicier, you can add more chili peppers.
Once the pork is tender and the flavors are well combined, remove the Bopis from heat.
Garnish with chopped spring onions for some freshness and added flavor.
