Method
- In a large pot, heat a couple of tablespoons of olive oil over medium heat.
- Add the onions and garlic to the pot and sauté until they become translucent.
- Add the tomatoes, bell peppers, and potatoes to the pot and cook for a few minutes, until they start to soften.
- Pour in the white wine and let it simmer for a couple of minutes to cook off the alcohol.
- Add the fish fillets to the pot and season everything with salt and pepper.
- Pour in the fish or vegetable broth, ensuring that the fish is mostly submerged in the liquid. If needed, add a bit more broth.
- Cover the pot and let the stew simmer for about 20-25 minutes, or until the fish is cooked through and the potatoes are tender.
- Once the stew is ready, sprinkle it with fresh chopped parsley for garnish.
- Serve the Caldeirada de Raia hot with a side of crusty bread to soak up the delicious flavors.
