  • 4 lbs ripe breadfruit (1 whole fruit)
  • Vegetable oil for frying
  • Salt to taste

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, make a few shallow cuts into the skin of the breadfruit to allow steam to escape during roasting.
  3. Place the breadfruit on a baking sheet and roast it in the preheated oven for about 1 to 1.5 hours, or until the skin turns dark brown and cracks open slightly.
  4. Remove the breadfruit from the oven and let it cool for a few minutes until it is safe to handle.
  5. Cut off the ends of the breadfruit and make an incision along its length. Gently peel off the skin. Remove any seeds or core if present.
  6. Slice the breadfruit into desired shapes, such as rounds or wedges.
  7. Fill a deep frying pan with vegetable oil and heat it over medium-high heat.
  8. Carefully place the breadfruit slices into the hot oil and fry them until they become golden and crispy on both sides. This usually takes about 3-5 minutes per side.
  9. Once fried, use a slotted spoon to transfer the breadfruit slices onto a paper towel-lined plate to drain excess oil.
  10. Sprinkle with salt to taste while the breadfruit is still hot.
