Ingredients
- 2 cups bitter leaf (washed and squeezed)
- 1 pound Assorted meats (beef, goat meat, or chicken), cut into chunks
- 1 pound Stockfish and dry fish soaked and cleaned
- 1 cup palm oil
- 1 onion (chopped)
- 3 tablespoons ground crayfish
- 2 tablespoons ground uziza seeds (optional)
- 2 tablespoons ogiri Igbo (traditional Nigerian seasoning)
- 2 tablespoons ogbono (African mango seeds) powdered or ground
- Salt and seasoning cubes to taste
- Fresh pepper (to your preference)
- 2 cups water
- Utazi leaves (optional, for garnish)
Instructions
- Season the assorted meats with salt, seasoning cubes, and any other desired spices. Boil until tender, then set aside.
- In a separate pot, add palm oil and heat on medium heat. Add the chopped onions and sauté until translucent.
- Add the ground crayfish, uziza seeds (if using), ogiri Igbo, and ogbono. Stir well to combine.
- Add the boiled meats, stockfish, and dry fish to the pot. Stir well to coat the meats with the palm oil and spice mixture.
- Pour in the water and bring to a simmer. Allow it to cook for about 10 minutes, stirring occasionally.
- Add the bitter leaf and fresh pepper to the pot. Stir well and let it cook for another 5 minutes. Adjust the seasoning if needed.
- If desired, garnish with sliced utazi leaves for added flavor and freshness.
- Serve hot with pounded yam, eba, or fufu.
