Method
- In a mixing bowl, whisk together the flour, sugar, vanilla extract, salt, milk, and egg yolks until you have a smooth batter.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the batter, being careful not to overmix.
- Heat a large non-stick skillet or frying pan over medium heat and melt the butter.
- Pour the batter into the skillet and cook for a few minutes, until the bottom is golden brown.
- Using a spatula, flip the pancake over and cook the other side until golden brown as well.
- Once cooked, tear the pancake into bite-sized pieces using two forks or spatulas.
- Continue to cook the torn pancake pieces for another minute or two, allowing them to get slightly crispy.
- Remove from heat and transfer the Kaiserschmarren to a serving plate.
- Dust generously with powdered sugar.
- Serve warm with fruit compote or jam if desired.
