Kaiserschmarren is an Austrian dessert. It's a light and fluffy shredded pancake, typically served with powdered sugar, fruit compote, or even a dollop of whipped cream.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 4 eggs separated
  • 3 tablespoons unsalted butter
  • Powdered sugar for dusting
  • Fruit compote or jam for serving (optional)

Method
 

  1. In a mixing bowl, whisk together the flour, sugar, vanilla extract, salt, milk, and egg yolks until you have a smooth batter.
  2. In a separate bowl, beat the egg whites until stiff peaks form.
  3. Gently fold the beaten egg whites into the batter, being careful not to overmix.
  4. Heat a large non-stick skillet or frying pan over medium heat and melt the butter.
  5. Pour the batter into the skillet and cook for a few minutes, until the bottom is golden brown.
  6. Using a spatula, flip the pancake over and cook the other side until golden brown as well.
  7. Once cooked, tear the pancake into bite-sized pieces using two forks or spatulas.
  8. Continue to cook the torn pancake pieces for another minute or two, allowing them to get slightly crispy.
  9. Remove from heat and transfer the Kaiserschmarren to a serving plate.
  10. Dust generously with powdered sugar.
  11. Serve warm with fruit compote or jam if desired.
