Murtabak

Murtabak is a delicious dish commonly found in Southeast Asian cuisine, particularly in countries like Malaysia, Indonesia, and Singapore. It is a stuffed pancake or bread filled with a flavorful mixture of minced meat (such as beef, chicken, or mutton), onions, spices, and sometimes vegetables or eggs. The filling is usually cooked with various aromatic herbs and spices, giving it a rich and savory taste. Murtabak is often enjoyed as a snack or a hearty meal, and it's often served with a side of curry sauce or pickles.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup water
  • 1 tablespoon vegetable oil
  • 1 pound minced beef or chicken, mutton
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste
  • cilantro chopped (optional)
  • Vegetable oil for frying

Method

  1. In a mixing bowl, combine the flour, salt, water, and vegetable oil. Knead the mixture until it forms a smooth dough. Cover the dough with a damp cloth and let it rest for about 30 minutes.
  2. In a separate bowl, mix the minced meat, chopped onion, minced garlic, curry powder, turmeric powder, salt, pepper, and chopped cilantro (if desired) until well combined.
  3. Divide the dough into equal-sized portions and roll each portion into a thin circle, about 8-10 inches in diameter.
  4. Place a portion of the meat filling onto one half of the rolled-out dough, leaving a small border around the edges. Fold the other half of the dough over the filling, pressing the edges to seal it.
  5. Heat a non-stick frying pan or griddle over medium heat and drizzle some vegetable oil onto the pan. Carefully place the filled dough onto the pan and cook for a few minutes on each side until golden brown and crispy.
  6. Once cooked, transfer the murtabak to a cutting board and cut it into smaller pieces for serving.
  7. Murtabak is traditionally served with a side of curry sauce or pickles. You can also enjoy it on its own or with your favorite dipping sauce.
