Töltött Káposzta is a traditional Hungarian dish that translates to “stuffed cabbage” in English. It’s a delicious and hearty recipe that consists of cabbage leaves filled with a tasty mixture typically made from ground meat, rice, onions, and spices. The stuffed cabbage rolls are then cooked in a flavorful tomato-based sauce until tender and flavorful.

Ingredients
  

  • 1 head cabbage large
  • 1 pound ground pork or beef (you can also use a combination of both)
  • 1 cup uncooked rice
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can tomatoes (400g) chopped
  • 2 cups beef broth or vegetable broth
  • Sour cream (for serving)

Method
 

  1. Gently remove the cabbage leaves from the head, making sure to keep them intact. Blanch the leaves in boiling water for a few minutes until they become pliable. Drain and set aside.
  2. In a large bowl, combine the ground meat, uncooked rice, chopped onion, minced garlic, vegetable oil, paprika, salt, black pepper, and cayenne pepper (if using). Mix well until all the ingredients are evenly distributed.
  3. Take a cabbage leaf and place a spoonful of the meat and rice mixture in the center. Fold the sides of the leaf over the filling, then roll it up tightly like a burrito. Repeat with the remaining cabbage leaves and filling.
  4. In a large pot, spread a layer of the chopped tomatoes on the bottom. Place the stuffed cabbage rolls seam-side down on top of the tomatoes.
  5. Pour the beef or vegetable broth over the cabbage rolls, making sure they are fully covered. If needed, you can add more water or broth to completely cover the rolls.
  6. Bring the pot to a simmer over medium heat. Cover and cook for about 1.5 to 2 hours, or until the cabbage rolls are tender and the flavors have melded together.
  7. Serve the Töltött Káposzta hot, garnished with a dollop of sour cream. It pairs well with crusty bread or mashed potatoes.
