Kunefe is a delicious Turkish dessert that’s sure to satisfy your sweet tooth! It’s made with layers of shredded pastry dough, filled with melted cheese (usually a variety called “kadayif”), and soaked in sweet syrup. It’s then baked until golden and crispy on the outside, while the cheese inside becomes wonderfully gooey and melty. To top it all off, it’s often served with a sprinkle of crushed pistachios or a dollop of creamy kaymak, a type of clotted cream.

Ingredients
  

  • 2 cups shredded pastry dough (kadayif)
  • 1 ½ cups unsalted cheese (traditionally, you can use a mix of mozzarella and akkawi cheese)
  • 1 cup sugar
  • 1 cup water
  • ½ cup unsalted butter melted
  • Crushed pistachios (for garnish)

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. Begin by preparing the sweet syrup. In a small saucepan, combine 1 cup of sugar and 1 cup of water. Stir over medium heat until the sugar is completely dissolved. Let the syrup simmer for about 5 minutes until it slightly thickens. Remove from heat and set it aside to cool.
  3. Take the shredded pastry dough (kadayif) and ensure the strands are loose and separated.
  4. Spread half of the shredded pastry dough evenly on the bottom of a round baking dish or skillet, creating a thin layer.
  5. Grate or crumble the unsalted cheese and sprinkle it evenly over the shredded pastry dough layer.
  6. Cover the cheese with the remaining shredded pastry dough, gently pressing it down to create a top layer.
  7. Pour the melted butter over the top of the shredded pastry dough, ensuring it is evenly distributed.
  8. Place the baking dish or skillet in the preheated oven and bake for approximately 20-25 minutes, or until the Kunefe turns golden brown and crispy.
  9. Once baked, remove the Kunefe from the oven and let it cool for a few minutes.
  10. Drizzle the cooled sweet syrup over the Kunefe, allowing it to soak in.
  11. Finally, sprinkle crushed pistachios on top for added flavor if desired.
