  • Preheat the oven to 400° F or preheat an electric waffle iron per manufacturer’s instruction manual.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
  • In a separate small bowl or container, whisk the buttermilk, butter, and vanilla.
  • Pour the wet ingredients into the dry ingredients and whisk until a smooth batter forms.
  • If using a silicone mold, pour one fourth of the batter into the mold and bake until puffed and golden brown, approximately 10-15 minutes. Repeat for all 4 waffles.
  • If using a waffle iron, lightly oil waffle iron. When iron is hot, fill per manufacturer’s instructions and cook until set repeating until batter is gone.
  • In the meantime, mix the Greek yogurt with the honey or maple syrup.
  • Top the warm waffles with sweetened yogurt, fresh peaches, and a drizzle of maple syrup.
