Ingredients
- 2 English muffins split and toasted
- 4 cups fresh spinach
- 4 eggs
- 1/4 cup hollandaise sauce
- Salt and pepper to taste

- Preheat your oven to 375°F.
- In a skillet over medium heat, add the spinach and cook until wilted. Set aside.
- If using ham or bacon, cook them in a separate skillet and set aside.
