Egg Fried Quinoa

Method
- Rinse the quinoa in a fine-mesh strainer and set aside.
- In a medium pot, bring the water to a boil. Add the quinoa, lower the heat, cover the pot, and cook for 15 minutes.
- Turn off the heat and let the quinoa sit for 5 minutes. Fluff it with a fork and set aside.
- In a large skillet or wok, heat the olive oil over medium-high heat.
- Add the onion, red bell pepper, and garlic, and sauté until tender.
- Push the vegetables to the side of the skillet and crack the eggs in the empty space. Scramble the eggs until cooked through.
- Mix the eggs with the vegetables and add the cooked quinoa.
- Season with salt, pepper, and soy sauce. Cook for an additional 2-3 minutes, until heated through.
- Garnish with green onions and serve hot.
